On this page you can find information and brewing guides to all coffees that we are currently working with and that are available on our shop, along with informations on the farm with are partnering with. We believe in diversifying the brewing approach to get the best out of each coffee.
april Selection Beans (Filter, Espresso & Limited)
Before Brewing
Resting
We recommend you let your beans rest for at least 14 days before brewing. This is what we use in our stores and roastery, it offers a way better flavor clarity and balance in the cup.
Water
We use a reverse osmosis system, with a PPM usually between 20 and 50.
Particle Size
We do not measure the particle size of our coffees, all the Filter recipes you will find below are based on a Mahlkonig EK43, and the espresso recipes on a Mahlkonig E80.
Brew Filter
Base recipe with April Brewer
Dose: 12g for April Selection, 13g for SP
Water: 200g at 92°C
Grind size: start between 11.5 - 12.5
Brew time: 2:20 - 3:00
Target TDS: 1.25 - 1.35
Pouring Structure April Selection & Limited:
1. 40g Circle Pour - 60g Center Pour (0:00)
2. 40g Circle Pour - 60g Center Pour (0:30)
Brew Espresso
Base recipe based on a Modbar (6 bar)
Dose (in): 19g for April Selection, 18g for SP
Dose (out): 56-58g for April Selection, 48-50g for SP
Grind Setting: start at 0.5 - 0.7
Brew Time: between 20-25s
Target TDS: 6.5 - 8


Sustainable Profile Coffee & Organic Coffee Beans
About
For the coffees in our House Coffee line, as we aimed to create a standard, no matter the origin. This is why the recipes are identical for each coffee.
These coffees are made to be used on a large variety of equipment, you should of course adjust this recipe so it suits your tastes and what you aim to get out of each cup.
You are welcome to use the same base recipe on our Organic Coffee Beans.
The general resting recommendation is also of at least 14 days, however as they are slightly more developed, you can even wait longer to make sure the coffee has degassed as much as possible.
Brew Filter
Base recipe with April Brewer
Dose: 13g
Water: 200g at 94°C
Grind size: 9
Brew time: 2 to 3 min
Target TDS: 1.25 - 1.35
Pouring Structure Sustainable Profile:
1. 60g Circle Pour - 40g Center Pour (0:00)
2. 60g Circle Pour - 40g Center Pour (0:30)
alternatively, 100g Circle Pour.
Brew Espresso
Base recipe based on a Modbar (6 bar)
Dose (in): 18g
Dose (out): 48g
Grind Setting: 4,2
Brew Time: 23-25s
Target TDS: 6.5 - 8
